Nachos are good. Nachos with two whole heads of roasted garlic? That’s how you earn the name Wowchos.

These loaded tortilla chips get piled high with soft, caramelized garlic cloves, diced green chiles, briny pimento-stuffed olives, and a generous blanket of melted Monterey Jack with jalapeño.

A finishing scatter of fresh cilantro and green onion tops brings it all together with a bright, herby crunch.

The whole thing comes together in about 45 minutes, and most of that is hands-off roasting time.

Pro Tips

  • Roast the garlic ahead of time and refrigerate it for up to 3 days so assembly is a breeze on game day
  • Spread chips in a single overlapping layer for even cheese coverage and fewer soggy spots
  • Swap the Monterey Jack for a Mexican blend or sharp cheddar if that’s what you’ve got on hand
  • Serve with a side of sour cream, guacamole, or a squeeze of fresh lime for extra zing
