These loaded tortilla chips get piled high with soft, caramelized garlic cloves, diced green chiles, briny pimento-stuffed olives, and a generous blanket of melted Monterey Jack with jalapeño.
A finishing scatter of fresh cilantro and green onion tops brings it all together with a bright, herby crunch.
The whole thing comes together in about 45 minutes, and most of that is hands-off roasting time.

Cover metal baking pan (approximately 9 x 12 inches) with overlapping tortilla chips.
Distribute garlic, onion, chiles and olives evenly over the chips.
Cover with cheese and bake at 400℉ (200℃) for 5 minutes or until cheese melts.
Top with cilantro and green onion and serve.
