40 minThe world’s second healthiest cookie (whatever the first one is, this one’s probably more fun) takes the simplest possible approach: mix everything in one bowl, spread it in a pan, bake, and cut into bars. No chilling, no scooping, no rolling.
Rolled oats and flour split the base equally, giving you a chewy, substantial bar with real texture and staying power. Brown sugar adds molasses depth and cinnamon brings its usual warmth. Chopped raisins throughout add little bursts of sweetness in every bite.
Chopping the raisins instead of leaving them whole is a small detail that makes a difference. Cut raisins distribute their sweetness more evenly and stick to the dough better, so you don’t end up with raisin-heavy bites and raisin-free bites.
These bake low and slow at 325°F (160°C), which gives the oats time to toast and the bars time to set without over-browning the edges.
Kitchen Tips
- Spread the mixture evenly in the pan. Thin spots will overbake while thick spots stay underdone.
- Let the bars cool completely in the pan before cutting. Warm bars crumble apart.
