Wolfberry & Walnut Brownies with Chocolate Drizzle (Dessert)

Wolfberries are some of the most nutritionally dense superfoods on earth and have been used for thousands of years in Chinese and Tibetan medicine. They contain all the essential amino acids, making them complete proteins. They also have very high concentrations of vitamin C and 21 trace minerals necessary for health.

Directions

In a high-powered blender, blend the oats until a flour forms.

You can also use ready-made oat flour. Add to a large bowl.

Repeat process for the walnuts and almonds, being sure not to over-process them.

Add to the bowl and gently break apart any clumps with your fingers.

Leave a few larger pieces for texture. Stir in the cinnamon.

Add dates and water to blender and process until the mixture forms a ‘date water’.

Add banana and blend until well combined.

Add date mixture to dry ingredients and mix until no flour remains.

Stir in vanilla and the wolfberries.

Line a 20cm square pan with baking paper.

Scoop the dough into the pan. With a wet spoon spread the dough until smooth.

Place in the freezer for 30 minutes.

Place the unsweetened chocolate in a microwave-proof bowl and heat in the microwave for 1 minute, stir, and heat for another 30 seconds or until completely melted.

Remove pan from freezer. Using a small spoon, drizzle with chocolate to add a decorative touch. Cut into squares.

Store in the freezer for a guilt-free snack. They can be eaten straight from the freezer or heated in the microwave for 30 to 45 seconds.
