Sometimes the simplest recipes are the ones you come back to over and over. Two ingredients. That’s it. Italian dressing and boneless chicken breasts go into a bag, hang out in the fridge, and come out ready to hit the grill.

The dressing does triple duty here as marinade, basting sauce, and flavor bomb. All those herbs, vinegar, and oil in the dressing tenderize the chicken and keep it juicy while building a tangy, savory crust on the grill.

This is the recipe you reach for on busy weeknights when you want grilled chicken that actually tastes like something without any real effort.

Kitchen Tips

  • Marinate at least 30 minutes, but up to 3 hours delivers the most flavor
  • Use a nonaluminum dish or zip-top bag since the vinegar in the dressing reacts with metal
  • Brush with fresh dressing while grilling, not the marinade the raw chicken sat in
  • Works just as well under a broiler if you don’t have access to a grill

Directions

In large, shallow nonaluminum baking dish or plastic bag, pour dressing over chicken.

Cover, or close bag, and marinate in refrigerator, turning occasionally, 30 minutes to 3 hours.

Remove chicken and discard marinade. Grill or broil chicken, turning once and brushing frequently with remaining dressing.

Chill leftovers immediately.
