Ingredients

2 1/2 pounds beef brisket cut into 1inch cubes
1 pound ground pork lean
1 large onion chopped
2 tablespoons wesson oil
1 x salt to taste
1 x black pepper to taste
3 cloves garlic minced
2 tablespoons green chili peppers diced
8 ounces tomato sauce
1 each beef bouillon cube low sodium
12 ounces beer
1 1/4 cups water
4 tablespoons chili powder
2 1/2 tablespoons cumin ground
1/8 teaspoon dry mustard
1/8 teaspoon brown sugar
1 pinch oregano

Directions

In a large kettle or Dutch oven, brown the beef, pork and onions in hot Wesson oil.

Add salt and pepper to taste.

Add remaining ingredients.

Stir well.

Cover and simmer 3 to 4 hours, until meat is tender and chili is thick and bubbly.

Stir occasionally.

Cajun Chicken Pasta

Very easy and quick. Used penne pasta in lieu of linguini. My wife said I was wasting my time, kids would not eat. But, they LOVED it, said they want it again tomorrow. Son said 'you really out-did yourself dad'. Next time I think I'll add some capers.
