These aren’t coffee waffles, despite the name. “Mocha Mix” is a non-dairy creamer brand from the West Coast, and standing in for milk it produces a waffle batter that’s slightly sweeter and richer than the standard, which means crisper edges and a more golden top.

The sneaky-good ingredient is the Cream of Wheat cereal, soaked in the creamer until softened. The fine semolina absorbs liquid and brings extra structure, giving these waffles that classic Belgian-style crunchy outside, custardy inside texture.

A single teaspoon of gluten flour added alongside the regular all-purpose is the kind of trick old breakfast cooks swore by. It boosts protein in soft white flour and helps the waffles hold their crisp edges instead of going limp on the plate.

Pro Tips

  • Let the Cream of Wheat soak in the creamer for at least 5 minutes before adding the rest. Hard semolina granules give a gritty waffle.

Directions

Soften cream of wheat in Mocha Mix.
