Vinegared sushi rice (sushi-meshi): short-grain rice cooked with kombu and dressed with a rice vinegar, mirin, and sugar seasoning. The essential base for sushi, chirashi, and temaki.

This is sushi-meshi, the seasoned rice that forms the foundation of every proper sushi dish. Whether you’re rolling maki, forming nigiri, or scattering chirashi, getting this rice right is where sushi-making begins. Everything you stack, wrap, or slice sits on top of it.

The kombu simmered with the rice is the quiet ingredient most home cooks skip. That single square of dried seaweed infuses the cooking water with glutamates and umami, giving the finished rice a savory depth that plain-water rice never develops. Discard the kombu before dressing; it has done its job.

Soaking the rice for 30 minutes before cooking is the other detail that separates restaurant-quality rice from mushy home attempts. The soak lets the grains absorb water evenly so they cook through without getting gummy on the surface.

Dress the rice while still hot on a non-metallic platter. Metal reacts with the vinegar mixture and can leave a metallic taste. A wooden sushi hangiri is traditional, but a large ceramic or glass plate works too. Use a fork or a rice paddle (shamoji) to cut the vinegar in with slicing motions, not stirring; aggressive stirring breaks the grains and turns the rice starchy.

Cool while fanning the rice if you want that characteristic glossy shine. Cooled rice holds together without being sticky, perfect for shaping.

Use for nigiri, maki rolls, sushi bowls, or inari pouches.

Chef Tips

  • Use Japanese short-grain rice only; long-grain won’t stick properly.
  • Rinse rice 4 to 5 times before soaking until water runs clear.
  • Never refrigerate sushi rice; it hardens and loses texture.
  • Season the vinegar mixture with your palate in mind; taste and adjust.

  • Use brown short-grain rice for a nuttier, whole-grain version.
  • Add a splash of yuzu juice to the vinegar for citrusy brightness.
  • Swap part of the sugar for a drizzle of honey for rounder sweetness.

Directions

Combine the rice vinegar, sugar, salt and mirin in a 1 to 1½ qt enameled or stainless steel saucepan.

Bring to a boil uncovered and stir in the soy sauce.

Cool to room temperature.

Combine 1½ cups of cold water and the rice in a 1½ to 2 qt stainless steel or enameled saucepan and let soak for 30 minutes.

Then add the square of kombu and bring to a boil over high heat.

Cover the pan, reduce the heat to moderate, and cook for about 10 minutes, or until the rice has absorbed all of the water.

Reduce the heat to its lowest point and simmer another 5 minutes.

Let the rice rest off the heat for an additional 5 minutes before removing the cover and discarding the kombu.

Transfer the hot rice to a large non-metallic platter or tray.

Pour on the vinegar dressing and mix thoroughly with a fork.
