Ca phe sua, or Vietnamese coffee, is two ingredients doing extraordinary work together. Sweetened condensed milk goes into the bottom of the glass, then strong dark-roast coffee gets poured slowly on top, layering instead of mixing. You stir it just before drinking, watching the dark coffee turn caramel-tan as the milk rises.

Sweetened condensed milk is the historical solution to a practical problem. Fresh milk was scarce during French colonial Vietnam, so the thick, shelf-stable canned version became the standard. It contributes sweetness, body, and a creamy mouthfeel that no fresh dairy can replicate in this drink.

Traditional preparation uses a small metal phin filter perched over the glass, which drips coffee slowly onto the milk. A French press or moka pot makes a fine substitute as long as the coffee is strong and bitter enough to balance the sweet condensed milk.

Pro Tips

  • Use a dark, robust roast, light roasts get lost behind the milk’s sweetness
  • Vietnamese chicory coffee (like Trung Nguyen) gives the most authentic flavor
  • Pour slowly down the side of the glass to keep the milk layer intact for visual drama
  • Adjust the ratio to taste, two tablespoons of milk is the starting point, not a rule
  • For iced version (ca phe sua da), pour over ice after stirring, the dilution is intentional

Variations

  • Blend with ice for ca phe sua da xay, a smooth coffee slushie
  • Top with a dollop of yogurt for ca phe sua chua, an underrated cafe order in Vietnam
  • Add a sprinkle of cocoa powder on top before stirring for a mocha lean

Directions

Place the milk in the bottom of an 8 ounce glass.

Carefully pour in coffee, trying not to disturb the layer of milk.

Stir milk up from bottom and sip coffee.

There will probably be some milk left in the bottom of the glass when you are finished.

Variation: This coffee may also be served iced.

Add ice cubes on top of the sweet milk and proceed as above.
