This retro Jello salad is pure New England potluck nostalgia. Dry orange Jello powder gets stirred straight into cottage cheese (no boiling water, no waiting for it to set), then folded together with crushed pineapple, mandarin orange segments, and whipped cream.

The trick is using the Jello powder dry. It dissolves into the moisture from the cottage cheese and pineapple juice, coating everything in a sweet orange flavor without turning the whole thing into a firm gelatin mold. The result is fluffy, creamy, and barely set.
