40 minThis one-pot vegetable rice brings together golden sautéed onions, earthy mushrooms, bright broccoli, and juicy tomatoes in a savory chicken bouillon broth.
The rice soaks up every bit of that seasoned liquid, finishing with a hit of grated Parmesan that ties the whole bowl together.
It’s the kind of flexible side dish that pairs with grilled chicken, roasted fish, or stands on its own for a light lunch.
Serve it hot off the stove or chilled straight from the fridge. Either way, it delivers.
Kitchen Tips
- Use long-grain rice for fluffy, separate grains. Short-grain will give you a creamier, stickier texture.
- Don’t skip the step of cooking onions until golden. That caramelization builds a flavor base you can’t shortcut.
- Swap chicken bouillon for vegetable bouillon to make this fully vegetarian.
