35 minSometimes dessert should feel like a gentle exhale after a big meal. No heaviness, no guilt, just cool pineapple sitting in a shimmery vanilla sauce that barely wobbles when you touch it.
Fresh pineapple gets sliced into rings and placed in shallow dessert dishes. The sauce is simply water, pineapple juice, honey, and vanilla simmered with agar flakes until dissolved. Pour it over the fruit, chill for about 12 minutes, and the agar sets into a delicate, silky gel.
It’s naturally dairy-free, light enough to follow any meal, and looks absolutely stunning served in clear glass dishes where the golden pineapple glows through the set sauce.
Chef Tips
- Use a ripe, fragrant pineapple. Press the base and give it a sniff. If it smells sweet and tropical, it’s ready. No aroma means no flavor.
- Stir the agar constantly as it simmers. Agar flakes need a full 5 minutes of simmering to dissolve completely, and they’ll clump if left alone.
- Agar sets at room temperature, so work quickly when pouring the sauce over the pineapple rings. Once it cools, it firms up fast.
