Up-Side Apple Cake

Upside-down apple cake with caramelized Granny Smith slices, applesauce-enriched batter, and a cinnamon cream cheese topping. Served warm for the ultimate fall dessert.

90 minCaramelized Granny Smith slices line the bottom of the pan, then get flipped into glory when this spiced apple cake comes out of the oven.
The batter itself is loaded with applesauce for extra moisture, plus cinnamon and freshly ground nutmeg that fill your kitchen with that unmistakable autumn smell.
But the real star? A cinnamon cream cheese and sour cream topping that you pass on the side so everyone can pile it on thick.
Kitchen Tips
- Use firm Granny Smith apples so the slices hold their shape during caramelizing and baking
- Arrange the apple slices in a neat spiral on the bottom of the pan for a stunning presentation when you flip
- Cool for exactly 15 minutes before inverting; too long and the caramel sets and sticks
- Bring the cream cheese to room temperature before making the topping for a silky, lump-free finish

Grease 9 inch springform or round cake pan 1½ inch deep.
Melt 2 tablespoons butter with brown sugar in 10 inch skillet over medium heat.
Add apple slices.
Cook over medium heat until apples begin to soften, about 4 minutes, stirring often.
Arrange apples in even layer over bottom of prepared cake pan.
Set aside to cool.
Cream remaining ½ cup butter and granulated sugar until light.
Add egg.
Beat until smooth.
Add applesauce and blend well.
Combine flour, baking soda, cinnamon, nutmeg and salt in small bowl.
Add to creamed mixture.
Mix until smooth.
Spread batter evenly over apples.
Place pan on baking sheet.
Bake on middle rack of 350℉ (180℃) F oven until wood pick inserted in center comes out clean, about 40 to 45 minutes.
Cool on rack 15 minutes.
Use small flexible knife to separate cake from sides of pan.
Invert pan on serving platter and unmold cake (replace any apple slices that may remain in pan).
Serve warm.
Pass CIinnamon Cream Topping in separate dish.
Beat cream cheese and sour cream until smooth.
Gradually add cinnamon, then sugar, mixing well after each addition until smooth.
Let stand 15 minutes at room temperature before serving.
