No-bake chocolate roll with melted semi-sweet chocolate, colored marshmallows, cherries, and walnuts rolled in coconut. A retro fridge candy that slices into colorful pinwheels in just 15 minutes.

This is the candy your aunt used to bring to every holiday gathering, wrapped in wax paper and looking like a festive little log.

Melted semi-sweet chocolate gets stirred with cherries, colored marshmallows, and walnuts, then rolled into a tight log on wax paper.

A coating of shredded coconut gives the outside a snowy, textured finish.

Chill it, slice it into rounds, and you’ve got a tray of gorgeous chocolate pinwheels with pops of color from the marshmallows and cherries peeking out.

Kitchen Tips

  • Work quickly once the chocolate is melted since it starts to set fast
  • The colored marshmallows create the prettiest cross-section when sliced
  • Roll tightly for the best shape and cleanest slices
  • Chill for at least 2 hours before slicing so the roll holds its shape
  • Use a sharp knife and wipe the blade between cuts for the neatest rounds

Directions

Melt the chocolate and add the cherries and marshmallows.

Mix well and put on waxed paper and roll up like jelly roll.

On another piece of waxed paper put some coconut and roll the roll in it.

Refrigerate and slice as needed.
