20 minThis no-cook fruit salad is really more of a dessert disguised as a side dish. Mandarin oranges, pineapple, fresh blueberries, and seedless grapes get folded into a creamy base of whipped cream and sour cream, then studded with grated chocolate candy bars throughout.
The sour cream is what sets this apart from a standard creamy fruit salad. It cuts through the sweetness of the canned fruit and candy bars, giving the whole bowl a tangy backbone that keeps you reaching for another spoonful.
Drain the canned fruit thoroughly. Any extra liquid will thin out the cream base and make everything soupy. Pat the mandarin segments dry with paper towels if you want to be extra careful.
Serve this immediately after folding everything together. The chocolate softens and the fruit releases juice as it sits, so this is a “make it right before you need it” kind of dish. It’s a potluck crowd-pleaser that looks impressive but takes almost no effort.
Chef Tips
- Use cold whipped cream and sour cream straight from the fridge for the best texture.
- Grate the candy bars on the large holes of a box grater. Smaller shreds melt too fast.
- Fold gently with a rubber spatula to avoid crushing the mandarin segments.
Variations
- Swap candy bars for chocolate chips or shaved dark chocolate for a less sweet version.
- Add sliced bananas or fresh strawberries for more fresh fruit in the mix.
- Use Greek yogurt in place of sour cream for a tangier, thicker base.
