45 minThe trick that saves turkey burgers from their reputation for sawdust dryness, raw bacon ground straight into the patty. The food processor turns it into a smooth paste that distributes fat and flavor evenly through the lean turkey, basting from the inside as the patty cooks.
Sage anchors the flavor. Turkey and sage are old friends from Thanksgiving, and the herb gives these burgers an unmistakable savory note that cuts through the bacon richness.
Chilling the formed patties is a step worth its 20 minutes. The fat firms up, the proteins relax, and the patties hold their shape in the pan instead of slumping.
Pro Tips
- Use bacon with visible fat streaks, lean bacon won’t carry enough fat to keep the turkey moist
- Don’t press the patties while they cook, you’ll squeeze out the bacon-fat baste that keeps them juicy
- Sauté the mushrooms in the same pan after the patties for added flavor depth
- Toast the buns, soft buns turn soggy fast under juicy burgers
Variations
- Add minced fresh thyme or rosemary alongside the sage for a forest-floor flavor profile
- Top with melted Swiss or smoked gouda instead of mayo for a richer build
- Serve open-faced over greens for a low-carb plate, the burger doesn’t need a bun to shine
