Softened leeks get cooked down in butter until they’re silky sweet, then flour, nutmeg, and pepper build a roux that becomes a velvety cream sauce with broth and milk.
Diced turkey, smoky chopped ham, and bright pimiento get stirred through, then the whole thing is layered with hot egg noodles and blanketed in shredded Swiss cheese.
Thirty minutes in the oven and that Swiss cheese goes golden brown and bubbly on top while the layers underneath meld into something that tastes way more sophisticated than a casserole has any right to.

Heat oven to 350℉ (180℃).
Heat margarine in 3 quart saucepan over medium heat.
Cook leeks in margarine about 7 minutes, stirring occasionally until softened.
Stir in flour, salt, nutmeg and pepper. Cook over medium heat, stirring constantly, until bubbly, remove from heat.
Stir in broth and milk.
Heat to boiling, stirring constantly.
Boil and stir 1 minute. Stir in turkey, ham and pimiento.
Spread about half of the turkey mixture in ungreased square pan, 9×9×2 inches, or 2½ quart casserole.
Spread noodles over turkey mixture.
Top with remaining turkey mixture. Sprinkle with cheese.
Bake uncovered 25 to 30 minutes or until cheese is light brown.
