30 minThis is a fall dinner that punches well above its 20-minute cooking time. Pan-seared turkey breast meets a quick pan sauce of apple juice and cream, with sliced pears softened in the same skillet and toasted pecans scattered over the top for crunch.
The turkey-breast slices need a hot pan and a quick sear. They’re lean and cook fast, so even a minute too long turns them into white-meat regret. Look for light golden color on each side and pull when the inside is just barely done. They’ll finish cooking under the lid in the pear-soak.
Apple juice is the pan-sauce liquid that makes this work. Its natural sweetness builds on the pears without needing added sugar, and its acidity deglazes the fond into the sauce instead of leaving it stuck to the pan.
Use Bosc or Anjou pears. They hold their shape under heat. Bartlett gets mushy fast; mealy pears collapse into the sauce. Cut them ¼ inch thick so they warm through in the 1-2 minutes called for without breaking apart.
Toast the pecans separately on a dry pan or in a 350°F (175°C) oven for 6-8 minutes. Raw pecans taste flat next to the rich pan sauce.

Heat oil in 12 inch skillet over medium-high heat until oil sizzles, about 1 minute.
Place turkey breast slices and garlic in skillet. Cook about 1 to 2 minutes on each side or unitl turkey breasts are lightly browned. Sprinkle with peppercorns and salt. Pour in apple juice and cream over slices. Add pears.
Cover; cook 1 to 2 minutes longer or until pears are heated. Sprinkle with toasted pecans. If desired, serve on a bed of hot fluffy rice.
