Spiced turkey sausage browns with chopped onion until the edges get golden and the kitchen smells incredible. Long grain rice, sliced carrots, celery, fresh basil, and chicken broth all go in together, then a lid goes on and the stovetop does the rest.

Twenty minutes of simmering, a five-minute rest, and a fluff with a fork. Every grain comes out separate, seasoned, and loaded with flavor from the sausage drippings.

Pro Tips

  • Resist the urge to lift the lid while the rice simmers; steam is doing the work
  • Let it rest the full 5 minutes off heat for fluffy, not sticky, rice
  • Brown the sausage well before adding liquid for deeper, more savory flavor
  • Add frozen peas during the last 5 minutes of cooking for a pop of color and sweetness

Directions

Combine onion and sausage in large non-stick skillet.

Cook over medium heat; turn to brown evenly.

Add remaining ingredients and heat to boiling.

Lower heat and cover; simmer 20 minutes until liquid has been absorbed.

Remove from heat and let stand 5 minutes then fluff with fork.
