Ground turkey simmered in a tangy homemade barbecue sauce with apple cider vinegar, brown sugar, chili powder, and Worcestershire, piled onto kaiser rolls. A leaner, no-grill sloppy joe that’s ready in 30 minutes.

Ground turkey cooks up with diced onion and green pepper, then gets simmered in a homemade barbecue sauce built from apple cider vinegar, brown sugar, dry mustard, chili powder, paprika, and Worcestershire.
It’s tangy, a little sweet, and has just enough kick to keep things interesting.
The turkey soaks up all that saucy goodness as it simmers for 20 minutes, turning into a loose, sloppy filling that’s begging to be piled onto a split kaiser roll.
Leaner than beef but every bit as satisfying when the sauce is doing this much work.
Kitchen Tips
- Cook the onion and green pepper in water instead of oil for an even lighter version
- Let the sauce simmer the full 20 minutes so the vinegar mellows and the flavors concentrate
- Pack the rolls high and keep extra napkins handy; these get gloriously messy

Directions
Heat water in a 10-inch skillet over medium heat.
Cook onion and bell pepper in water for about 2 minutes, stirring occasionally, until crisp-tender.
Stir in turkey.
Cook 4 to 5 minutes, stirring occasionally, until no longer pink.
Stir in remaining ingredients (except the rolls of course); reduce heat.
Cover and simmer about 20 minutes, stirring occasionally, until hot.
Fill rolls with turkey mixture.
