Tuna Pasta Alfredo with Vegetables
Submitted by nmsequin
Tuna pasta alfredo tossed with broccoli in a from-scratch herbed white sauce with garlic, thyme, and Parmesan. Creamy, satisfying comfort food without a jar of sauce in sight.

The sauce here is built from scratch: milk and chicken broth get infused with garlic, bay leaf, and thyme, then thickened into a velvety roux-based cream that puts anything from a bottle to shame.
Toss it with linguine, flaked canned tuna, and tender broccoli, then finish with a shower of grated Parmesan.
It’s weeknight-fast but tastes like something from a neighborhood Italian spot.
Pro Tips
- Let the milk mixture steep for the full 15 minutes. That resting time is where all the herb and garlic flavor gets pulled into the liquid.
- Whisk constantly when adding the infused milk to the roux. Stop stirring for even a moment and you’ll get lumps.
- Don’t overcook the broccoli. Microwave just until barely tender. It’ll keep cooking once you fold it into the hot sauce.
Variations
- Swap the protein: Diced cooked chicken breast works beautifully in place of tuna.
- Change the veg: Try frozen peas, asparagus tips, or roasted cherry tomatoes instead of broccoli.
