No-bake chocolate truffles shaped like tiny mice with almond ears, dragee eyes, and licorice tails. A fun holiday treat kids love to make and eat. Makes 2 dozen.

3 hrsThese little chocolate mice are the kind of treat that makes kids shriek with excitement and adults sneak seconds when nobody’s looking.
They’re basically rich chocolate truffles (semi-sweet chocolate mixed with sour cream and chocolate wafer crumbs) rolled into teardrop shapes and decorated to look like mice.
Sliced almonds become ears, silver or gold dragees become shiny little eyes, and thin strips of licorice make the tails.
No baking required, and they keep in the fridge for up to a week, which makes them ideal for holiday parties, school events, or any time you need a showstopper that’s actually simple to pull off.
Kitchen Tips
- Chill the mixture until firm. Don’t try to roll the truffles before the chocolate mixture has set for a full hour. Warm truffle mix sticks to everything and won’t hold its shape.
- Slightly pointed at one end. That teardrop shape is what makes them look like mice. Roll a ball, then gently pinch and taper one end for the nose.
- Get the kids involved. Decorating these is the fun part. Let little hands press in the almond ears and place the dragee eyes. It’s edible arts and crafts.
- Roll in icing sugar for white mice, chocolate crumbs for dark ones. Make both for a mixed colony on your cookie platter.

Directions
In bowl, combine chocolate and sour cream.
Stir in 1 cup chocolate wafer crumbs; mix well.
Cover and refrigerate until firm; about 1 hour.
Roll scant tablespoonfuls of chocolate mixture in small balls slightly pointed at end.
Roll lightly in icing sugar or chocolate wafer crumbs.
GARNISH: Insert dragees (silver or gold balls) for eyes, almond slices for ears and small bits of licorice for tails.
Refrigerate until firm, about 2 hours.
(Truffles may be stored in airtight container in fridge for up to 1 week).
