Ingredients

4cups mango ripe
1/2cup lime seeded and chopped
1cup onions yellow
1/2cup ginger fresh and grated
3each garlic cloves peeled and minced
3/4cup raisins white
2cups brown sugar, light
1cup apple cider vinegar
1/4cup orange juice fresh
1/4cup lemon juice fresh
1tablespoon mustard seed whole
1teaspoon red pepper flakes
1teaspoon cinnamon ground
1/4teaspoon cloves ground

Directions

Mango: Hard, ripe, peeled, seeded and sliced.

Place all ingredients in heavy saucepan over medium heat.

Bring to boil. Lower heat and simmer for about 20 minutes, stirring frequently.

Remove from heat, cover, and let stand for about 12 hours.

Again bring to a boil, lower heat, and cook for 15 minutes, stirring frequently.

Remove from heat and immediately pour into hot sterilized jars.

Vacuum seal. Makes: 4 1/2 pint jars.
