When the clock’s ticking and hungry mouths are waiting, this is the kind of recipe you reach for.

Ground beef gets browned with onion and garlic, then tossed with chunky fresh tomatoes, green bell pepper, and a savory hit of soy sauce before being stirred into tender egg noodles.

Everything goes into a baking dish for a quick trip to the oven, and dinner is served.

No fancy technique required. Just solid, belly-filling comfort food that comes together in half an hour.

Kitchen Tips

  • Drain the beef well after browning to keep the casserole from getting greasy.
  • Use fresh, firm tomatoes so they hold their shape and don’t turn the noodles mushy.
  • For a gluten-free version, swap egg noodles for rice noodles and use tamari instead of soy sauce.
  • Top with shredded cheddar or mozzarella during the last 5 minutes of baking for a cheesy crust.
