15 minThis bruschetta goes a step beyond the classic by running it under the broiler until the fresh mozzarella melts into the tomato topping. Roma tomatoes, red onion, capers, and fresh basil get tossed with balsamic vinegar and olive oil, then piled on toasted Italian bread and broiled until bubbly.
Roma tomatoes are the right choice here. They have less water and more flesh than regular tomatoes, so your bread stays crisp instead of turning soggy. Chop them fine so the topping sits flat and the cheese melts evenly across the surface.
The capers add a briny pop that cuts through the richness of the melted cheese and olive oil. Just a couple tablespoons, but they make a real difference. Fresh basil goes in raw before broiling, and it wilts just enough under the heat to release its oils without turning brown.
Chef Tips
- Toast the bread well before topping. Soft bread will collapse under the weight of the tomato mixture and turn into a soggy mess under the broiler.
- Drain any excess liquid from the tomato mixture before spooning it onto the bread. The balsamic and tomato juices pool quickly.
- Watch the broiler closely. Mozzarella goes from perfectly melted to burnt in about 30 seconds.
Variations
- Substitute white beans for the mozzarella as the recipe suggests for a dairy-free, protein-rich version.
- Add a drizzle of honey over the finished bruschetta for a sweet-savory contrast.
- Use burrata instead of mozzarella for an even creamier, more indulgent topping.
