Easy toasted pecans are the kind of three-ingredient snack that makes you wonder why you ever bought them in a tin. Margarine, pecan halves, and a sprinkle of salt at the end is the entire shopping list, and the payoff is buttery, crackling nuts with that warm, almost candied edge that raw pecans can’t touch.

The technique that matters here is the toss in melted margarine before they hit the oven. Coating the halves first gives them a lacquered surface that browns evenly instead of going dry and dusty in spots. Stirring once partway through the bake catches any pecans hiding under others so the whole pan toasts in step.

Salting after baking, not before, is key. Hot oil-coated nuts grab salt and hold it on the surface where you taste it first.

  • Watch the oven closely after the 15-minute mark. Pecans go from toasty to bitter fast, and you’ll smell them turn before you see it.

Directions

Preheat oven 350℉ (180℃).

Melt margarine in saucepan. Stir pecans in melted margarien until they are thoroughly coated.

Spread pecans on a cookie sheet.

Bake 15 to 20 minutes in 350℉ (180℃) oven until lightly toasted, stirring once.

Remove from oven. Sprinkle lightly with salt. Let cool and serve.

Store in airtight container. Yields ½ lb. pecans.
