Ground turkey and onions get browned together, then mixed with three kinds of beans: baby limas, baked beans, and red kidney beans for a protein-loaded base that sticks to your ribs.
The sauce is where the magic happens. Brown sugar, molasses, ketchup, mustard, and a splash of vinegar create that sticky-sweet, tangy glaze that caramelizes around the edges as it bakes.
It comes out of the oven hot, bubbly, and smelling like a backyard cookout in a casserole dish.
Bonus: there’s a microwave version for nights when you need dinner on the table in 20 minutes flat.
Kitchen Tips
- Drain the turkey well. Ground turkey releases a lot of liquid. Pour it off after browning or the casserole will be watery instead of thick and saucy.
- Use canned baked beans undrained. The sauce from the can adds extra body and sweetness to the dish. Drain the kidney beans, but leave the baked beans as-is.
- Let it bubble. The 35 minutes uncovered in the oven lets the top caramelize. Don’t cover it or you’ll miss out on those sticky, browned edges.
- Double it for a crowd. This scales up easily for potlucks. Use a 9×13 pan and add about 10 extra minutes to the bake time.
