Forget the bottled stuff. Homemade Thousand Island dressing has a chunky, layered flavor that store-bought versions just can’t touch. This one builds on a mayo and chili sauce base with chopped hard-boiled eggs, dill pickle, and onion stirred right in.

What sets this version apart is a sneaky dash of barbecue sauce alongside the hot pepper sauce. It adds a hint of smoke and molasses sweetness that rounds out the tang from the chili sauce and pickle. You won’t be able to pinpoint it, but you’ll notice the depth.

The texture here is key. You want visible pieces of egg, pickle, and onion throughout, not a smooth puree. Chop everything by hand rather than using a food processor. A quick chill in the fridge lets the flavors meld and the dressing thicken up.

Chef Tips

  • Chop the dill pickle fine so it distributes evenly. Big chunks make for unbalanced bites.
  • Use good chili sauce, not ketchup. Chili sauce has more body and a slight kick that ketchup lacks.
  • This dressing tastes even better the next day after the flavors have had time to marry in the fridge.
  • Keeps well for up to a week in a sealed jar.

Variations

  • Add sweet pickle relish instead of dill pickle for a sweeter, more classic profile.
  • Stir in a spoonful of prepared horseradish for extra bite on a burger or Reuben sandwich.
  • Make it lighter by using half Greek yogurt, half mayo as the base.
