Thai-style fried noodles are a vegetarian wok dish: al dente noodles stir-fried with garlic, crushed peanuts, pickled radish, diced tofu, and chili flakes. A simpler, pantry-friendly cousin of pad thai.

30 minThis is a stripped-down version of pad thai that skips the tamarind and fish sauce, making it fully vegetarian while keeping the classic sweet-salty-nutty-sour balance. Perfect for a weeknight when you want noodles fast and don’t have the full Thai pantry.
Crushed peanuts and pickled radish are the two ingredients that mark this as Thai street food rather than generic Asian noodles. Pickled daikon (chai poh) adds sweet-salty crunch and is worth seeking out at an Asian market, the flavor is hard to replicate with anything else.
Cook the noodles just to al dente, about 7 minutes in boiling water. Overboiled noodles break during the stir fry and turn mushy against the hot wok. Drain and toss with a tiny bit of oil to prevent sticking.
The stir fry is fast. Garlic goes in cold oil over medium heat to bloom, then the noodles, then the seasonings all at once. Lift and toss gently with chopsticks or two spatulas so the noodles don’t shred.
Kitchen Tips
- Use rice noodles or fresh egg noodles depending on preference. Soaked rice sticks give the classic pad-thai texture.
- Press tofu between paper towels for 10 minutes before dicing, dry tofu browns rather than steams.
- Toast peanuts dry in the wok for a minute before starting, it deepens their flavor dramatically.
- Serve with lime wedges and extra chili flakes so each diner can adjust to taste.
Variations
- Add a beaten egg scrambled into the noodles for a more traditional pad thai texture.
- Toss in bean sprouts and chopped Chinese chives at the end for freshness and crunch.
- Swap tofu for shrimp or chicken for a non-vegetarian version.

Boil noodles in ample lightly salted water for about 7 minutes, or until al dente.
Drain.
Heat the oil in a wok over medium heat.
Add the garlic and stir-fry until the colour changes.
Add the noodles and stir well. Add all the SEASONINGS and stir-fry for 5 to 7 minutes, being careful not to break the noodles.
Transfer to a serving dish and serve the CONDIMENTS in small dishes on the side.
You might want to sprinkle some extra sugar on the noodles.
