| 1 | pound | sirloin steak | boneless, top |
| 1 1/2 | tablespoons | soy sauce, sodium reduced | |
| 1/4 | cup | sherry | dry |
| 1 | teaspoon | ginger root | grated |
| 1 | teaspoon | garlic | minced |
| 1 | teaspoon | sesame oil | |
| 1/4 | teaspoon | red hot chili pepper, dried | crushed, up to 1/2 teaspoon |
| 2 | cups | ramen noodles | cooked, or linguine |
| 1/4 | cup | scallions, spring or green onions | chopped tops, or fresh cilantro |
Combine sherry, soy sauce, ginger, garlic, sesame oil and pepper.
Place beef steak in plastic bag; add marinade.
Close bag securely and marinate 15 minutes.
Pour off marinade; reserve.
Heat non stick skillet over medium heat 5 minutes.
Add steak and cook 12 to 15 minutes for rare (140 F) to medium (160), tuning once.
Remove steak; keep warm.
Dissolve 2 teaspoons cornstarch in reserved marinade and 1/4 cup water; add to skillet.
Bring to boil, stirring constantly. Stir in noodles.
Carve steak into thin slices and serve over noodles.
Sprinkle with green onion.
