White almond bark is the right choice here, not white chocolate chips. Chips contain stabilizers that resist melting cleanly and seize when stirred with cool ingredients. Almond bark melts smooth, sets firm, and forgives the inevitable temperature shock when you mix it with room-temperature cereal.
Mixing the cereals together first, then pouring the bark over, is the move that gives even coverage. Trying to add cereals one at a time to melted bark causes uneven distribution and sticky clumps. Get everything in the bowl, pour, and stir fast.

Melt almond bark in a double boiler.
Mix cereals in a large bowl, and pour the melted almond bark over them.
Mix thoroughly, add colored marshmallows, mix again and then drop by tablespoonfuls onto wax paper.
Cool until firm.
