Tasty Turkey Loaf
Submitted by jtgofcc
Turkey meatloaf bound with saltines and eggs, seasoned with sloppy joe mix, and brushed with a ketchup-mustard-brown sugar glaze. Lighter than classic beef meatloaf with the same comforting bake.

90 minTasty turkey loaf is the leaner cousin of the Sunday meatloaf you grew up on. Three pounds of ground turkey makes a hefty loaf that slices clean for sandwiches the next day, while a sloppy joe seasoning packet does the spice-blend work in one stir.
Saltine cracker crumbs are the binder of choice here. They absorb juices from the turkey without going gummy the way bread crumbs sometimes do, and they leave the loaf with a softer crumb. Two eggs keep everything anchored so the slice holds together on the plate.
The glaze is a classic three-part move. Ketchup for sweet and tang, prepared mustard for sharpness, brown sugar for stickiness once it caramelizes under the foil. A splash of Worcestershire sneaks in the savory depth turkey sometimes lacks.
Covering the loaf with foil is what keeps it moist. Turkey is unforgiving when overcooked, and the foil traps steam so the meat stays juicy through the full hour. Resting for 15 minutes after baking lets the juices redistribute. Slice too soon and the plate floods.
Pro Tips
- Don’t overmix the meat. Combine just until ingredients distribute. Overworked turkey turns dense and rubbery.
- Use a meat thermometer. Turkey loaf is done at 165°F (74°C) in the center.
- Brush the glaze on twice. Once before baking, once after removing the foil for the last 10 minutes for a glossier finish.
- Save thick slices for next-day cold sandwiches with mayo and pickles.
Variations
- Stir in a finely diced bell pepper and a grated carrot for extra moisture and color.
- Use a taco seasoning packet instead of sloppy joe mix and top with salsa for a Tex-Mex spin.
- Wrap the loaf in bacon before baking for a smoky, indulgent version.
