This spicy chicken soup comes together fast using cooked chicken, a packet of ramen noodles, and a handful of fresh ingredients that add crunch and sweetness. The surprise here is chopped apples, which add a crisp, sweet contrast to the heat from the red pepper flakes. It’s an unexpected pairing that actually works.

The ramen noodles and their seasoning packet form the base, simmered with condensed chicken broth and water. Ten minutes of cooking softens the noodles and builds a quick, savory broth. The chicken, apples, snow peas, and green onions all go in at the end and just get brought back to a boil so they stay crisp and fresh.

Don’t overcook the final additions. The snow peas should still snap and the apple pieces should hold their shape. Mushy apples in soup aren’t appetizing.

Kitchen Tips

  • Use leftover rotisserie chicken to keep this truly quick. Shred or cube it before adding.
  • Cut the apples just before adding them to the soup. Pre-cut apples brown and lose their crisp texture.
  • Adjust the red pepper flakes to your heat preference. Half a teaspoon gives moderate warmth. A full teaspoon puts this firmly in spicy territory.
  • Serve immediately. The ramen noodles absorb broth as they sit and the soup goes from brothy to stodgy quickly.

Variations

  • Add a splash of soy sauce and a squeeze of lime for a more complex Asian flavor profile.
  • Stir in baby bok choy or shredded cabbage for extra greens.
  • Use pear slices instead of apple for a softer, more delicate sweetness.
