| 1 | large | broiler-fryer chicken | |
| 1 | cup | cream | |
| 2 | tablespoons | water | |
| 2 | large | eggs | |
| 2 | cups | flour, all-purpose | |
| 1 | x | salt and black pepper | |
| 1/2 | teaspoon | paprika | |
| 1 | cup | bacon drippings | |
| 1 | cup | vegetable shortening | |
| 1 | tablespoon | butter |
Cut chicken into frying pieces.
Add salt and pepper to chicken.
Set aside for 15 minutes.
Mix cream, water, eggs and beat.
Pour cream mixture over chicken and allow to soak for 1 hour.
Add paprika to flour, then roll chicken in flour.
Melt bacon fat, shortening and butter in skillet.
Drop chicken in hot grease and fry on medium heat until golden brown.

History - Basil is a member of the mint family, and was known as the herb of kings in ancient times. In fact, its name may have been derived from the Greek word basileus, meaning "king"....
I tweeked this recipe a bit. If you use chorizo instead of the pork, cook the meat in olive oil, drain the meat, add some sliced serrano peppers, use habenero sauce for the hot sauce, and use a can of tomatoes with habeneros, and leave out the beer. It is very good.
