5 minThis is a poolside drink that tastes like a tropical vacation in a glass. Pineapple-passion fruit-banana juice spiked with peach schnapps, light rum, and a splash of orange liqueur. Pour it all over cracked ice in a goblet and you’re done in under five minutes.
The juice blend does most of the flavor work. Pineapple brings tartness, passion fruit adds a floral punch, and banana smooths everything out with natural sweetness. The three spirits play supporting roles: peach schnapps for stone-fruit warmth, light rum for a clean boozy backbone, and triple sec (or Grand Marnier or Cointreau) for that bright orange citrus note on top.
Each spirit is measured at just one tablespoon, so this isn’t a heavy-hitting cocktail. It’s a sipper, meant to be enjoyed slowly with the sun on your face.
Kitchen Tips
- Use cracked or chipped ice, not cubes. Smaller ice pieces chill the drink faster and create a nice frost on the outside of the glass
- Chill the juice beforehand so the ice doesn’t melt too fast and water things down
- Pour the juice first, then the spirits. A gentle stir is all it needs
- Garnish with a slice of fresh peach, a pineapple wedge, or an orange wheel to match the flavors
Variations
- Skip the alcohol and use extra juice for a virgin tropical sipper
- Swap light rum for coconut rum for a pina colada-style twist
- Blend everything with ice in a blender for a frozen slushy version
