| 1/2 | cup | sweet red bell peppers | chopped |
| 1/2 | cup | green bell peppers | chopped |
| 1/2 | cup | sweet yellow bell peppers | chopped |
| 1/4 | cup | celery | chopped |
| 1/4 | cup | red onion | chopped |
| 1/4 | cup | chives | fresh, chopped |
| 2 | tablespoons | parsley leaves | flat-leaf, fresh, chopped |
| 1/4 | cup | puritan oil | |
| 2 | tablespoons | red wine vinegar | |
| 1 | tablespoon | thyme | fresh |
| 1 | x | salt | to taste |
| 1 | x | black pepper | to taste |
In large bowl, combine potatoes, bell peppers, celery, red onion, chives and parsley, tossing gently to mix.
In small bowl, combine oil, vinegar, thyme, salt, pepper.
Pour dressing over potato mixture, tossing gently to combine.
Serve at room temperature.
