Ingredients

4 cups new potatoes cooked, cut into 1/2 inch pieces
1/2 cup sweet red bell peppers chopped
1/2 cup green bell peppers chopped
1/2 cup sweet yellow bell peppers chopped
1/4 cup celery chopped
1/4 cup red onion chopped
1/4 cup chives fresh, chopped
2 tablespoons parsley leaves flat-leaf, fresh, chopped
1/4 cup puritan oil
2 tablespoons red wine vinegar
1 tablespoon thyme fresh
1 x salt to taste
1 x black pepper to taste

Directions

In large bowl, combine potatoes, bell peppers, celery, red onion, chives and parsley, tossing gently to mix.

In small bowl, combine oil, vinegar, thyme, salt, pepper.

Pour dressing over potato mixture, tossing gently to combine.

Serve at room temperature.
