The yogurt gives this soup body without weighing it down. It creates a creamy base that’s lighter than using cream or ice cream, and the natural tang plays off the strawberry sweetness beautifully. Plain yogurt is key here. Flavored yogurt adds too much sugar and competes with the fresh fruit.
Use the ripest, most fragrant strawberries you can find. Since nothing gets cooked, the quality of the berries is everything. Pale, out-of-season strawberries will give you a bland, watery soup no matter how much honey you add.
