Cold fruit soup might sound unusual if you’ve never tried it, but one spoonful of this strawberry ginger beauty will make you a believer.

Fresh strawberries and blueberries get pureed with ginger’s spicy kick, then chilled until ice-cold for a soup that’s part dessert, part palate cleanser, entirely refreshing.

Serve it in small bowls as a stunning start to a summer dinner party or as a light, sophisticated ending.

Kitchen Tips

  • Use peak-season berries for sweetest, most vibrant flavor
  • Adjust ginger amount to taste, start with less if sensitive to spice
  • Chill thoroughly for at least 4 hours for best flavor development
  • Garnish with fresh mint leaves and whole berries for elegant presentation
