Start with fully ripe berries for the best flavor and color. Crush them thoroughly and drain through a jelly bag. Don’t squeeze the bag or you’ll push pulp through and end up with cloudy jelly instead of that clear, jewel-like finish. Patience here pays off.
The boiling step is short but critical. Bring the juice and sugar to a rapid boil, stir in the pectin, then hit a hard rolling boil for exactly 30 seconds. That’s it. Overboiling breaks down the pectin and gives you syrup instead of jelly. Skim the foam off the top before jarring for a clean presentation.
Pro Tips
- Use the freshest, ripest strawberries you can find. Under-ripe berries give you pale, weak-flavored jelly.
- A jelly bag gives the clearest results. Cheesecloth works but let it drip for several hours, ideally overnight.
- Stir constantly during boiling to prevent scorching on the bottom of the pot.
- Test the set by putting a spoonful on a cold plate. If it wrinkles when you push it with your finger, it’s ready.
Variations
- Mixed berry: Swap half the strawberries for raspberries or blackberries for a deeper, more complex flavor.

Wash, and remove stems and hulls from 3 quarts fully ripened strawberries.
Crush thoroughly.
Drain through jelly bag. Combine juice and sugar.
Heat rapidly to boiling.
Add fruit pectin. Stir constantly before and while boiling.
Heat to full rolling boil. Boil hard ½ minute.
Remove from fire.
Skim. Other berries may be substituted for strawberries.
