2 hrsYour favorite frozen cocktail, reimagined as a cool, creamy pie. This no-bake dessert captures all the strawberry-and-rum flavor of a strawberry daiquiri with none of the blender, and no oven required on a hot day.
The filling is wonderfully simple: cream cheese and sweetened condensed milk beaten smooth, flavored with strawberry daiquiri mix and a hit of rum extract, then lightened by folding in whipped topping. The result is a fluffy, tangy-sweet mousse that sets up sliceable.
The cream cheese is what keeps it from going cloying. Its tang balances the sweet condensed milk the way fresh lime cuts a real daiquiri.
Press it into a graham cracker crust and let the fridge or freezer do the rest. Chilled, it’s soft and creamy; frozen, it’s more like an ice cream pie, so take your pick.
Kitchen Tips
- Soften the cream cheese fully before mixing so the filling beats out smooth, not lumpy.
- Fold in the whipped topping gently to keep the filling light and airy.
- For a real daiquiri kick, swap the rum extract for a tablespoon or two of actual rum, which also keeps it softer when frozen.
- Freeze for a firmer, ice-cream-like slice, or chill for a softer, mousse-like one.
Variations
- Garnish with fresh strawberry slices, lime zest, or a swirl of extra whipped topping.
- Use a different frozen cocktail mix such as pina colada or margarita for a new flavor.
- Make it in a chocolate or vanilla wafer crust instead of graham.
