30 minPlukfisk (literally “plucked fish") is one of those old Scandinavian kitchen traditions born from pure practicality: you had leftover boiled cod, so you turned it into something warm, creamy, and deeply satisfying.
Flaked codfish and diced potatoes get folded into a velvety white sauce seasoned with a sharp hit of mustard. It’s humble food, the kind that fills you up on a dark Nordic evening without any pretense.
The whole thing comes together in about 30 minutes, making it one of the fastest ways to turn yesterday’s fish into tonight’s dinner.
Chef Tips
- Use a good-quality prepared mustard or homemade mustard sauce. The mustard is what gives plukfisk its character and lifts it above a basic fish cream.
- Be gentle when folding in the cod. You want distinct flakes, not a paste.
- Serve with dark rye bread and pickled beets on the side for an authentic Danish spread.
