3 minPart Bellini, part spritzer, all refreshing. Fresh peach puree sits at the bottom of a tall glass, then gets topped with crushed ice, a generous pour of white wine, and a splash of lemon-lime soda. The fizz from the soda lifts the peach flavor and lightens the wine into something you can sip all afternoon.
Two cups of peach puree divided among four glasses means every sip starts with a burst of fruit. As the ice melts, the drink stays cold and the peach flavor gradually blends upward through the wine.
This comes together in about 3 minutes. No shaking, no muddling, no special tools. Just pour and serve.
Kitchen Tips
- Use ripe, fragrant peaches for the puree. Unripe peaches are mealy and bland and won’t contribute enough flavor.
- Puree the peaches until completely smooth. Chunks clog the straw and make the drink hard to sip.
- Serve immediately. The soda goes flat fast and the ice waters everything down if it sits.
- Use a crisp, dry white wine like Sauvignon Blanc or Pinot Grigio. Sweet wines make this cloyingly sugary with the soda.
Variations
- Swap the lemon-lime soda for sparkling water for a less sweet, more sophisticated spritzer.
- Use frozen peach slices blended smooth when fresh peaches aren’t in season.
- Try mango or strawberry puree instead of peach for a different fruit spritzer.
