Springtime Pudding Cake

A four-layer sponge cake with three different pudding fillings: cherry-almond, crushed pineapple, and chocolate-pecan, all wrapped in fresh whipped cream. A showstopping no-bake dessert that chills overnight.

30 minThree pudding flavors, four layers of sponge cake, and a blanket of whipped cream. This is the dessert equivalent of a triple feature, and every layer brings something different to the fork.
The cherry-almond custard is tinted pink and studded with chopped maraschino cherries. The pineapple custard is tropical and bright. The chocolate layer gets loaded with chopped pecans for crunch. Stack them between thin sponge layers and frost the whole thing in billowy whipped cream.
The overnight chill is where the magic happens. The pudding softens the cake layers just enough so they meld together, and every slice reveals those gorgeous colored stripes. No baking required if you start with store-bought sponge layers.
Chef Tips
- Reduce the milk in each pudding package by half a cup so the filling sets thicker and doesn’t soak through the cake layers.
- Drain the crushed pineapple thoroughly. Excess juice will thin the pudding and make the layers slide.
- Slice each sponge cake layer in half horizontally with a long serrated knife. Use a gentle sawing motion and rotate the cake as you go.
- Chill for a full overnight. Rushing this step means messy slices and flavors that haven’t had time to come together.

Directions
Slice each cake layer in half to make 4 layers.
Make puddings according to package directions, reducing milk by ½ cup for each package.
Mix half vanilla pudding with almond flavoring, cherries and red food coloring.
Mix half vanilla pudding with crushed pineapple.
Mix chocolate pudding with nuts.
Whip cream with 2 tbsp sugar and 1 teaspoon vanilla.
To assemble: Place cake layer on serving dish, cover top with cherry custard, place cake layer over this and spread with pineapple custard, place layer over this and spread with chocolate custard.
Top with remaining cake layer. Cover top and sides with whipped cream.
Chill overnight.
