Spinach sausage cheese bake with Italian sausage, cottage cheese and mozzarella. Easy casserole layered and baked in 45 minutes, wheat-free.

This hearty layered bake packs Italian sausage, three cheeses, and a full pound of spinach into one bubbling, satisfying dish.

Browned sausage simmers in tomato sauce while a spinach-cheese mixture made with cottage cheese, Parmesan, and egg spreads across the bottom of the pan. Everything gets topped with shredded mozzarella and baked until golden.

It’s like lasagna without the noodles, making it naturally wheat-free and lower-carb.

  • Squeeze spinach completely dry or the casserole will be watery
  • Drain fat from sausage thoroughly before adding sauce
  • Use low-fat cottage cheese to keep it lighter

Directions

Brown sausage in skillet over medium high heat.

Drain fat from skillet and stir in tomato sauce.

Set mixture aside.

Preheat oven to 350℉ (180℃) F (175 degrees C).

In a large bowl, combine the spinach, cottage cheese, Parmesan cheese and egg.

Mix well and spread mixture in the bottom of a 9×13 inch baking dish .

Spoon sausage mixture over spinach mixture and top with mozzarella cheese.

Bake in preheated oven for 40 minutes.
