| 1 | pound | spinach | fresh |
| 1 | small | radicchio | head, separated into leaves |
| 2 | tablespoons | lemon juice | |
| 2 | tablespoons | vegetable oil | |
| 1/2 | teaspoon | black pepper | |
| 1 | teaspoon | salt | |
| 1/4 | teaspoon | paprika | |
| 1/8 | teaspoon | red pepper flakes | |
| 2 | cups | papaya | ripe, peeled, cubed |
| 2 | large | pink grapefruit | peeled and sectioned |
| 2 | medium | oranges | peeled and sectioned |
| 1/2 | medium | onion | thin rings |
Remove stems from spinach.
Wash and pat dry on paper towels.
Tear into bite-size pieces.
Combine spinach and radicchio in a large bowl.
Toss well.
Combine lemon juice, oil, sugar, pepper, paprika, salt and red pepper in a jar.
Cover tightly and shake vigorously.
Add to spinach mixture, tossing gently.
Add papaya, orange and onion.
Toss gently.
