Onion soup mix is the secret ingredient in this crowd-pleasing spinach casserole that tastes way more complicated than it is.

Frozen spinach gets dressed up with sour cream, sharp cheddar, and that savory soup mix, then topped with buttery bread crumbs for crunch.

It’s the kind of retro side dish that never goes out of style at Thanksgiving, Easter, or any gathering where you need something green and delicious.

Kitchen Tips

  • Squeeze thawed spinach thoroughly, then squeeze again to remove all excess water
  • Brown bread crumbs in melted margarine before topping for extra flavor
  • Use block cheddar and grate it yourself for better melting than pre-shredded
  • Make ahead and refrigerate unbaked, then pop in oven an hour before serving
