| 1 | pound | roast beef | shaved |
| 1 | cup | orange marmalade | |
| 1/2 | cup | salsa | hot |
| 1 | teaspoon | ginger root | grated |
| 8 | x | flour tortillas | 9" |
| 1/2 | cup | almonds | unblanched, sliced |
| 2 | cups | spinach | fresh, shredded |
| 1 | cup | mushrooms | fresh, thinly sliced |
| 1/2 | cup | scallions, spring or green onions | thinly sliced |
| 1 | x | scallions, spring or green onions | brushes (optional) |
Divide beef into 8 equal portions; cover and set aside.
Combine marmalade,salsa and gingerroot in small saucepan.
Cook and stir over low heat until warm.
Soften tortillas according to package directions.
Spread about 1 tbsp marmalade mixture on 1 side of each tortilla and sprinkle with almonds.
Top with beef,spinach,mushrooms and green onions, dividing evenly among tortillas;roll up.
Arrange roll-ups in 15 1/2 x 10 1/2 x 1 inch jelly roll pan;cover tightly with aluminum foil.
Bake at 350 degrees F, 15 minutes or until heated through.
To serve, arrange 2 roll-ups on each plate;garnish with green onion brush.

As one of the more well-known fruits around Christmas time, the cranberry can be found in almost anything. Cakes, sauces, tarts and even ginger ale become festive once winter has arrived and cranberries are in season....
Very yummy dish. I changed one thing though, instead of the bread I used Ritz crackers.
