A Quick Italian-Style Pasta Without The Calorie Hit

This lighter pasta dish proves you don’t need cream sauce or pounds of cheese to land a satisfying weeknight dinner. The whole sauce comes together in the microwave in about 8 minutes, while your penne or ziti boils on the stove. Done in 20.

The microwave method isn’t cutting corners, it’s a genuinely smart move here. Garlic, onion, and olive oil get a quick zap to take the raw edge off, then mushrooms and canned tomatoes (with their juice) cook covered to soften and concentrate. The mushrooms release their water into the tomato base, building flavor without added fat.

A pinch of crushed red chili flake brings warmth, halved black olives add briny pops, and just 2 teaspoons of grated parmesan deliver maximum cheese impact for minimal calories. Fresh basil tossed in at the end keeps it bright and herbaceous.

Kitchen Tips

  • Use canned tomatoes packed in their own juice rather than puree. The juice provides the right consistency once it cooks down.
  • Pull the pasta one minute before package directions. The hot mushroom-tomato mixture finishes cooking it just enough.
  • Save ¼ cup pasta water before draining. A splash loosens the sauce if it tightens up too much.

Directions

In a 3 quart microwavable casserole, combine onion, garlic and oil and stir to coat.

Microwave on high (100%) for 1 minute. Add mushrooms and tomatoes with reserved liquid and stir to combine. Cover and microwave on high for 7 minutes, stirring once every 3 minutes. Add olives and pepper and stir thoroughly.

To serve:

In serving bowl arrange pasta; top with mushroom-tomato mixture and toss to combine. Sprinkle with cheese and garnish with basil.
