Spiced applesauce cookies with cinnamon and cloves bake into soft, cake-like drops sweetened with thick unsweetened applesauce. Makes 3 dozen tender old-fashioned cookies in 30 minutes.

These are old-fashioned drop cookies that lean closer to soft, cake-like textures than the chewy or crisp ends of the cookie spectrum. Applesauce takes the place of much of the fat that traditional sugar cookies rely on, which gives them a tender, almost muffin-like crumb with a quiet apple sweetness behind the cinnamon and cloves.

The directions are firm about one thing: thick, unsweetened applesauce. Watery applesauce throws off the moisture balance and the cookies spread thin and crisp instead of doming up. Unsweetened keeps the sugar count intentional and lets the warm spices read clearly without competing sweetness.

Alternating the dry ingredients with the applesauce is the standard cake-mixing technique that prevents gluten overdevelopment. Flour goes in three additions, applesauce goes in two between them, and the batter stays just barely combined when finished. Overmixing here means tough, dense cookies.

Pro Tips

  • Drop teaspoonfuls 2 inches apart as the directions specify. These don’t spread aggressively, but they do dome up.
  • Bake one sheet at a time on the middle rack for even browning. Two sheets means uneven heat circulation.
  • Watch carefully at 8 minutes. They go from pale to perfectly browned in under 2 minutes.
  • Cool on the pan for 1 minute before transferring to a wire rack. Hot from the oven they’re too soft to lift cleanly.

  • Add ½ cup of raisins or chopped walnuts for texture and old-fashioned charm.
  • Brush the warm cookies with a thin powdered-sugar-and-milk glaze for a frosted version.

Directions

Cream shortening.

Add sugar gradually, creaming until light.

Beat in egg.

Sift dry ingredients together and add alternately with the applesauce. (be sure to use thick, unsweetened applesauce) Blend thoroughly.

Drop by teaspoons onto greased cookie sheets about 2 inches apart.

Bake in preheated 350℉ (180℃) oven for 10 minutes or until nicely browned.

Remove from pan to cool.

Makes about 3 dozen.
