Not your average side salad.

Browned SPAM pieces add a salty, crispy crunch alongside raw broccoli florets, cubed cheddar, and thinly sliced radishes for that peppery snap.

The whole thing gets tossed in a tangy white wine vinaigrette with a touch of dry mustard and garlic, then chilled so the flavors soak in.

Right before serving, toss in the toasted pecans for a buttery, nutty finish that ties everything together.

Kitchen Tips

  • Cut the broccoli into small, bite-sized florets so every forkful gets a bit of everything.
  • Toast the pecans in a dry skillet over medium heat, shaking often. They go from golden to burnt fast.
  • This salad holds up well, making it a solid choice for picnics and potlucks where it might sit out a while.
