Spam-Bolaya is a Cajun-spiced jambalaya mash-up loaded with browned SPAM, shredded chicken, and plump shrimp simmered in a smoky tomato-rice pot. Cayenne, Tabasco, and Cajun seasoning bring the Louisiana heat.

Browned SPAM cubes, tender shredded chicken, and plump shrimp all come together in a smoky, spicy tomato and rice pot loaded with Cajun seasoning, cayenne, and a good hit of Tabasco.
The rice cooks right in the broth, soaking up every last drop of that bayou flavor.
It’s the kind of one-pot meal that feeds a crowd and gets better with every bowl.
Kitchen Tips
- Brown the SPAM cubes until they get crispy edges. That caramelized crust adds serious depth to the whole pot.
- Don’t skip the bay leaves, but do remember to fish them out before serving.
- Add the shrimp last so they stay tender and don’t turn rubbery from overcooking.
- Adjust the cayenne and Tabasco to your heat tolerance. Start low, taste, and build up.

Directions
Cube SPAM in ¼ inch chunks and brown.
Boil chicken breast in 3 cups water until chicken is fully cooked.
Cook celery and bell pepper in fat from SPAM.
In a large pot, melt margarine and brown rice mix, add cooked celery and bell pepper.
Pour in stock from cooked chicken and both cans of soup and tomatoes (undrained).
Add ½ of seasoning mix pack from ric mix and stir.
Add bay leaves, tabasco, cayenne pepper, and Cajun seasoning.
Cook, covered, on low heat for 15 minutes.
Shred chicken, add chicken and SPAM and cook, covered, for 5 minutes.
Add shrimp, uncover and cook 5 minutes on medium heat.
Remove bay leaves and serve.
